Great Grandma Zada’s Jubilee Jumbles

As the holidays roll around, traditional family treats arrive in the spirit of Christmas. Natalie Christiansen, freshman at Regis Jesuit, shares how her family celebrates the season with baking.

“Every year before Christmas, all the women and girls in my family get together to have a day of baking,” she shared, “we make all sorts of different cookies, but we always make Great Grandma Zada’s Jubilee Jumbles, they remind me of the family that I only get to see once a year and it reminds me of Christmas!”

These delicious treats have been a tradition in the Christiansen’s house for many years now. See the recipe below and make them this season.

Recipe:

Dough Ingredients:

1/2 cup butter or margarine
1 1/2 cups white sugar
2 eggs
1 teaspoon vanilla
3 cups flour
1 teaspoon salt
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1 cup sour cream

Frosting ingredients:

1 stick of butter

1 cup of powdered sugar

1 teaspoon of vanilla

2 tablespoons of milk

Step 1: In a large bowl, blend butter, sugar, eggs, vanilla.

Step 2: In a separate bowl, whisk together the flour, salt, baking powder and baking soda.

Step 3: Gradually add the dry ingredients to the large bowl that contains the wet ingredients.

Step 4: Fold in the sour cream.

Step 5: Flatten dough with the bottom of a glass and place the cookies on cookie sheet to about 1/4 inch flattened.

Step 6: Bake at 350 degrees until light brown on the bottom.

Step 7: Make the frosting- whisk all the ingredients together until smooth

Step 8: Once cookies are done let them cool and then top with frosting.

Step 9: Serve  

Chocolate Mint Fudge

Every year leading up to the holidays Freshman, Evelyn Kilty and her mom prepare for Christmas by baking many holiday treats. One of Evelyn’s all time favorite holiday treats is Chocolate mint fudge.

Evelyn Kilty, shared in an interview, “Whenever my mom and I make the mint fudge, it reminds me of the holidays and Christmas time.”

Evelyn’s family recipe puts a twist on a holiday favorite, fudge. This treat has a great balance of lively mint and rich chocolate.

As Christmas is approaching try making this holiday treat with your family.

Recipe:

Ingredients:

1 Package of semi-sweet chocolate squares for baking

1 Package of white chocolate squares for baking

¼ teaspoon of peppermint or mint extract

1 16 oz container of vanilla frosting

3 drops of green food coloring

Step 1: Chop up the semi-sweet chocolate and white chocolate squares keeping them separate. Set aside ½ cup of the semi- sweet chocolate for garnishing.  

Step 2: Cut 1pieces of parchment paper and place one on a chilled pan.

Step 3: Combine half of the frosting and white chocolate in a sauce pan.

Step 4: Cook on low heat, mixing until smooth.

Step 5: Then add the green food coloring and peppermint extract to the chocolate and frosting mix.

Step 6: Pour into the chilled pan and let sit for 5 minutes.

Step 7: Combine the semi-sweet chocolate chips and the remaining frosting in sauce pan.

Step 8: Cook over low heat, mixing until smooth.

Step 9: Pour the mix over the mint layer and let sit for 10 minutes.

Step 10: After 10 minutes flip the pan over and peel the parchment paper off the mint fudge

Step 11: Cut the fudge into squares

Step 12: Microwave the ½ cup of semi-sweet chocolate that you set aside for 1 minute.

Step 13: drizzle the melted semi-sweet chocolate on the squares on mint fudge

Step 14: Serve
